Kale Chips

I'm going to be honest, I don't like it but I know it's a power food and I find ways to eat it everyday. Let's put it this way, Kale is the Chuck Norris of all vegetables. It's low in calories, high in fiber, has zero fat, high in iron, high in Vitamin K/C/A, is filled with powerful antioxidants, it's a great anti-inflammatory food, great for cardiovascular support, high in calcium and it's a great detox food. It's amazing how a simple leafy green can be so good for us.

On my quest to eat more of this nutritional powerhouse, I finally baked some Kale Chips. No, there not as good as Doritos but they are crispy, nutritious, and it's a guilt free snack. Plus Doritos smell like stinky feet, yuck. (Just kidding, chips are my weakness, but I'm making better decisions now days so I'll stick with my kale chips).

Ingredients:

Kale (preferably Organic)
Olive oil
Sea salt
Black Pepper
That's it!

Remove thick stems, tear into bite size pieces, wash and drain, dry thoroughly, drizzle olive oil, season with sea salt, sprinkle black pepper, mix well and spread onto baking pan. Pre-heat oven to 350 degrees and bake for 5-10 min or until dark green & crispy. I baked mine for 10 minutes. Let them cool slightly and enjoy!

Cheers to a healthy life style!

My First IPSY Glam Bag

I've been under the weather to say the least for the past few days, but today all of that went away because I received my first IPSY Glam bag!! What is an IPSY bag you might ask!? Well IPSY is a monthly subscription that sends you a cute makeup bag with 4-5 beauty products. They are affiliated with many beauty brands such as Urban Decay, NYX, Benefit, MICA, Smashbox, Michael Todd, Pixi and the list goes on and on, this is great because I know I'll be getting high quality products. The best part is that it's only $10/month which includes shipping. I love trying out new products so this beauty subscription was right up my alley.  Here is a closer look at what goodies came in my glam bag.

I Go By Edi

My first name is Ediveth and I go by Edi. Growing up I did not like my name, because all non-spanish speakers would butcher my name all the time. I've heard it all; Eddieva, Eddeth, Eddiebell..really! That's ok though, it's actually silly to me when people try to pronounce my name. I can see the relief in their eyes when I tell them "just call me Edi".  When I was little my mom told me that my name meant, flower in the middle of a pond. So magical right?! Well, I LOVE my name now, and I love my parents for giving me such a unique cool name! Although they forgot to give me a middle name. Oh, well I was their first child so I understand.

I wanted to share this picture of me when I had one tooth, natural rosie cheeks and a killer tan. I don't know about you but I love looking at old pictures of my brothers, my sister and I when we were babies. It reminds how "we started from the bottom, now we here!" No, but really. My family comes from very humble beginnings. I was born in Mexico, not to long ago (wink!). I have the best memories of my childhood especially the feeling of innocence and freedom. Our backyard was a gorgeous corn field that my grandfather owned. We lived in a very small house with blue floors! oh, yeah we were cool like that. At one point we had a duck, chickens, one cow, a horse named bombon (which means marshmallow, cause he was all white and had bright blue eyes), a turtle (that we found on the road and painted its shell with old nail polish, guess who's idea was it?!..poor thing), a cat and a dog. Our lives were simple, but full of love. I have my mother to thank for the most memorable childhood, given our circumstances. Te quiero Mami!

When I was nine years old we moved to sunny AZ. My dad worked very hard and went through so much to get us all here. I will forever be thankful. Te quiero Pa!  Fast forward a few years and I attended college and got my Bachelors in Art for Interior Design. Martha Stewart is the reason I'm a designer. I want to meet her some day.

There you have it, now you know a bit about me. Thank you from the bottom of my heart for taking the time to read this, you have no idea how excited I am to start this blog and share what inspires me. Have you heard the phrase "I just want to make beautiful things even if nobody cares" that's my motto and that's exactly what I want to do for the rest of my life.

xoxo
